Serves: 24 Cupcakes
Prep time: 30 minutes
Cook time: 20 minutes
Total time: 50 minutes
Website Source: Betty Crocker
Wine Cupcake Ingredients
Frosting
- 6 cups icing sugar
- 1/3 cup butter (softened)
- 1/8 teaspoon salt
- 1/3 cup Sauvignon Blanc wine
- 1 teaspoon grated lemon rind
- Yellow decorator sugar crystals/edible yellow pearls
Cupcakes
- 1 box Betty Crocker™ SuperMoist™ yellow cake mix (I tend to use the Vanilla Cake Mix as I can’t find the yellow!)
- 1/2 cup water
- 1/2 cup Sauvignon Blanc wine
- 1/2 cup vegetable oil
- 3 eggs
- 2 teaspoons grated lemon rind
Wine Cupcake Directions
Step 1
Heat oven to 170° C. Place paper cupcake cases in 24 regular-size muffin cups. Make cake batter as directed on box, using cake mix, water, wine, oil, eggs and lemon rind. Divide batter evenly among cupcake cases at about two-thirds full.
Step 2
Bake 20-22 minutes or until skewer inserted in centre comes out clean. Cool in pan for 10 minutes then remove from pans to cooling rack. Cool completely, about 30 minutes.
Step 3
In large bowl, beat powdered sugar, butter and salt with beater on low speed until blended. Beat in wine and lemon rind. If frosting is too thick, beat in more wine a few drops at a time. Frost cupcakes. Sprinkle with yellow sugar and pearls.
Step 4
Pour yourself a glass of wine and finish off the bottle! Enjoy!!
Hey Nicole, the icing has been fine for me, I think the longest I have kept them is 2-3 days max 🙂 So delicious!!
Wow! What a crazy idea, I love it! Does the icing oxidise a bit after a day or so or does all that sugar keep it in check? Or have they never lasted long enough to find out? ????
Oh my! Savvy B cupcakes! This is so crazy but I am going to have to try it. Nerd question: does the icing get a bit oxidised after a day or so or does all that sugar keep it in check? Or have they not lasted that long to find out?
Oh that are soo delicious Martine! You could simply swap out the packet mix for a GF one and you’re ready to go!
I have never even HEARD of this notion of wine and cupcakes but I am totally sold!
That’s why I love your facebook page Brooke!!
I’m all about making it easy for myself in the kitchen Elisha!! Let me know how you go with them 🙂
I especially like the ‘finish the bottle’ at the end part. We cant let good wine go to waste now. I am intrigued and will be making these for a party coming up soon. I also love the use of the old packet mix. Too easy!!
I always cook with wine so most of my recipes have it in there somewhere!!! heehee
