Wills Domain Cuvée d’Elevage Chardonnay Pinot Noir Sparkling

Introducing Cuvée D’Elevage Chardonnay Pinot Noir bubbles from Wills Domain. How gorgeous is that label. A big thanks to the Wills Domain team for sending this sample for us to try.
It’s made of 66% Chardonnay and 34% Pinot Noir and is matured for 30 months prior to being released. The Wills Domain team suggest to match this $39 bottle with smoked salmon, sushi or Foie Gras.
How did it go down? Pretty darn well! Here are the notes we jotted down:
It’s a very pale straw colour in the glass. On the nose it makes me think of freshly cut apples, pears and florals with a bit of spiced citrus. The crisp and fruity characteristics flow through to the palate with a subtle biscuityness. A pleasure to sip on.
