Vermentino is where it’s at peeps. If you’re a newbie to this grape variety then this Empirica by Castelli Estate Wines 2018 Vermentino is a great one to start with. But buy at least 2 bottles as 1 bottle is definitely not enough.

This one here is a 2016 Vermentino from Vigna Bottin Wines in McLaren Vale, South Australia. I matched it up with a super easy and delicious homemade pesto pappardelle pasta from the Dish Magazine. The crispy prosciutto on top was my addition to the recipe. Continue reading
