The 25 Swan Valley Sparkling Wines of Christmas 2014 – 8th December
Sittella NV Sparkling Rose
Sittella know how to make good sparkling, no actually they don’t. They know how to make awesome sparkling! Since moving to Perth I have been in love with their Sparkling Chenin Blanc, at $20 its awesome value and so tasty. But when Sittella released two new Méthode Traditionnelle’s (made exactly how french Champagne is made) my taste buds went berserk. The Rose is made from Chardonnay and Pinot Noir grapes which are grown down south in the Pemberton region of Western Australia. The grapes are all hand-picked and various special winemaking techniques are employed to produce only an exceptional quality of wine.
One of those special techniques is using the saignée method which literally means “bleeding” in French. This process involves a red wine fermentation followed by a portion of the pink juice from the grape must being removed at an early stage and then fermented separately to produce rosé.
This pretty as a picture sparkling rose sells for $29 at the cellar door in Herne Hill.
Tasting Note
On the eye it’s a super pretty pale rose gold colour on the eye. On the nose it smells of sherbet, strawberries, and Danish pastries, oh so pretty! In the mouth it has an amazing mouthfeel with flavours of cranberry, mandarin and raspberry with a super smooth cream like finish. Such a stunning bubbles, perfect to sip on whilst hanging out under the milestone waiting for that special someone!

About Sittella Winery in the Swan Valley
It was the French passion for wine and food that captured the hearts of Simon and Maaike Bern when they were traveling through France in the 80s.
The couple purchased the Herne Hill property and began producing wine for family and friends to start with. By 1998 the Bern’s wanted to turn their passion into a business and opened up the cellar door and restaurant. Their son, Yuri has since graduated from Curtin University in viticulture and oenology.
The team at Sittella are absolutely lovely, everyone is super friendly and knowledgable plus they run educational workshops throughout the year which are great fun.
