Tahbilk Family Series ‘Cabernet Sauvignon’ 2017
I do love when family friends pull out the nice wine when we visit 😉 It’s a good sign they know what we like. Okay let’s be honest, who has a selection of wine for certain guests and ones for other guests?
You know exactly what I’m talking about 😉
This Tahbilk 2017 ‘Family Series’ Cabernet Sauvignon is made in Central Victoria by 4th generation winemaker Alister Purbrick.
Its fermented in open oak vats and matured in large and smaller French and American oak barrels.
If you have seen some of my previous Tahbilk wine reviews then you’ll be aware that they are are a certified Carbon Zero winery and have been since 2012. They are strong believers in ‘leaving a sustainable legacy for generations to come’.
My tasting note:
So what did I think? I found it a red-purple colour in the glass. Notes of vanilla oak, cassis and black fruits rise from the glass. It also has an element of savouriness to it. After tasting it, I would definitely recommend decanting it or laying it down for a few more years to soften out those tannins and develop the dark black fruits and flavours further.
