Hollydene Estate Wines -2016 Cabernet Sauvignon
If you’re looking for a classic, 5 year old Cabernet Sauvignon from a cool climate, be sure to check out this Hollydene 2016 Cabernet Sauvignon. The grapes are sourced from the Hilltops region in South Western NSW.
I personally think it’s drinking really well right now, however if you have a the patience, it would be interesting to see what another couple of years in the cellar does for it.
We enjoyed it while catching up with friends after we’d had a lovely home-cooked meal. It was the perfect way to end a lovely evening.
My tasting note:
In the glass it’s a ruby red share with notes of blackcurrants and a bit of mushroom coming through. It really has a nice savoury, nearly farm-like nose to it. Very interesting! In the mouth the acidity suggests it will age longer, however it really opened up in the glass with plenty of juicy blackberry and currant flavour and a bit of spice.
