Castelli Empirica 2017 Ebullient Sparkling Riesling

Last ‘Wine Wednesday’ we cracked into our Good Pair Days sample pack and we couldn’t wait to get stuck into this 2017 Empirica ‘Ebullient’ Sparkling Riesling from Castelli Estate Wines in WA’s Great Southern wine region.
- Ebullient means ‘joyful and full of energy’
- Em-pir-ic ‘derived from experiment and observation alone, without using scientific method or theory’
- 18 months on lees
I can definitely say it brightened up our mid-week celebrations! By the end of the bottle there was definitely joy in the air.
In the glass it’s a pale yellow with a lovely bead of small bubbles. The nose makes me think of crisp citrus and apples/pears with some white flowers. While in the mouth it’s zesty and refreshing with hints of sherbet, granny apple crispness, and a smooth mouthfeel. It immediately had me craving seafood linguini.
This wine was sent to me as a sample, I was under no obligation to post about it.
